The Nouveau was harvested in late August (blue label his grapes in Blacé, orange label grapes from a neighboring village). Farmed organically and biodynamically. The grapes underwent semi-carbonic maceration for one week. The wines were bottled on October 14th I believe, and 1g/L of sulfur was added at bottling (up to 3g/L are permitted in natural wine). No additives or enzymes were added at any stage other than the miniscule dose of sulfites.
The wines made by Sylvere embody the reason why Beaujolais has become one of the most exciting wine regions in France! This is a wine that can be drunk immediately, but could also be kept in the wine cellar for a year or two. With its smooth character and easy drinkability, this is the perfect wine to share with friends. Due to a vein of granite that passes underneath this plot of vines, there is mineral finish to the vine that gives it a character that is more reminiscent of the grand cru wines of Beaujolais.
