Muscadet is the area, Melon de Bourgogne is the name of the grape. Classically speaking, Muscadet tends to be very light bodied and refreshing with hints of sea salt (classic oyster pairing); however this particular Muscadet ages on the lees for 36 entire months (a very long time indeed) . . . additionally, this wine has some years on it! Translation: this is a very unique wine for the region, with very oxidative qualities that work well with seafood, charcuterie, etc.
Pressed in pneumatic press. Juice transferred by gravity to small underground vats, which are lined with glass tiles and are very typical of the Nantes region. Cold clarification of grape juice, no chaptalisation. Temperature controlled alcoholic fermentation for several weeks at 20° using indigenous yeasts. 36 months on its lees, which are regularly stirred.
