Destemmed on skins for 3 weeks in a standup wooden cuvée.  Fermented dry and pressed to seasoned barrels and hogsheads.  Beautiful floral start with soft exotic peachy/mango/pineapple component, liquorice mid pallet with tannins and zesty citrus as a backbone.
