While Domaine de Juchepie is best known for their ethereal Chenin Blancs, they do make a small amount of wine from Cabernet Franc and Pineau d’Aunis as well! The yields for this Cabernet Franc are very small, only 10 hl/ha (average in France is roughly 5 times that). The grapes are destemmed, and macerate for 3 weeks before being aged in a sandstone amphora for one year. The bell pepper note that we find in many cabernet francs is definitely present here; the nose is almost paprika like. This wine is quite versatile and could be paired with a variety of main courses, such as cooked ham, goose, chicken, and rabbit.
